Easy Gluten Free Oat Waffles, Great for breakfast!

I’m pretty particular about my waffles. I want light, whole grain, crisp-on-the-outside, fluffy-on-the-inside, Belgian-with-deep-pockets, quintessential WAFFLES. No soggy waffles allowed! Bonus points if they freeze well so I can pop them in the toaster like Eggo’s.
These waffles meet all of the aforementioned qualifications. After tweaking five batches of these waffles, I can confirm that oat flour waffles are the waffles I’ve been searching for all along. Oat waffles are the waffles of my dreams.

Best of all, these waffles are gluten free, which means that I can share them with all of my friends! This waffle recipe is so simple that I have it memorized. It only requires one flour—oat flour—which is the easiest flour to make at home. Just toss some old-fashioned or quick-cooking oats in your blender or food processor and blend until they are a fine flour.
How to make gluten-free waffles
The secret to these waffles’ success is letting the batter rest for 10 minutes while your waffle iron heats up. That gives the oat flour time to soak up some of the moisture, so you get crisp, fluffy waffles when it’s go time. I learned this trick with my banana oat pancakes, a recipe that has quite a few fans.

Easy Gluten Free Oat Waffles

These light, crispy-on-the-outside, fluffy-on-the-inside waffles are my favorite waffles! They just happen to be gluten free (and heart healthy), too. The waffles are made entirely with oat flour, which you can easily make yourself (see note). Recipe yields 3 to 4 round, 7-inch Belgian waffles, or 6 small, square Belgian waffles (the size shown here).
Ingredients
  • 1½ cups oat flour*
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • Pinch of cinnamon, optional
  • ¾ cup room temperature milk of choice (light coconut milk, nut milk, cow's milk)
  • ¼ cup + 1 tablespoon melted coconut oil or 5 tablespoons butter, melted
  • 2 large eggs
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
Instructions
  1. In a mixing bowl, whisk together the dry ingredients: oat flour, baking powder, salt and cinnamon. In another bowl, whisk together the wet ingredients: milk, melted coconut oil or butter, eggs, maple syrup and vanilla extract.
  2. Pour the wet ingredients into the dry ingredients. Stir with a big spoon until just combined (the batter will still be a little lumpy). Let the batter rest for 10 minutes so the oat flour has time to soak up some of the moisture. Plug in your waffle iron to preheat now.
  3. Once 10 minutes is up, give the batter one more swirl with your spoon. Pour batter onto the heated waffle iron, enough to cover the center and most of the central surface area, and close the lid. Once the waffle is deeply golden and crisp, transfer it to a cooling rack or baking sheet. Don't stack your waffles on top of each other, or they'll lose crispness. If desired, keep your waffles warm by placing them in a 200 degree oven until you're ready to serve.
  4. Repeat with remaining batter. Serve waffles with maple syrup and nut butter, or any other toppings that sound good!
Notes
Recipe based on my oat pancakes and coconut waffles recipes.
*Make your own oat flour: Simply blend old-fashioned or quick-cooking oats in a food processor or blender until they are ground into a fine flour. You'll need to blend about 1½ cups oats to make 1½ cups flour.
*A note on gluten free oats: Be sure to buy certified gluten-free oats or certified gluten-free oat flour to ensure your waffles are gluten free.
Freeze it: These waffles freeze beautifully. Just store in freezer-safe plastic bags and pop individual waffles into the toaster until warmed through.
The best waffle iron ever: I had no idea how much of an improvement my new fancy-pants waffle maker would be over my hand-me-down waffle iron. This thing cooks crispy waffles that never stick to the surface area. The best part is that it has a large cooking surface, which means you can cook an entire batch of waffles with just two presses.

Ginger-Mint-Lemon Strawberry Salad Avocado

Fresh Ginger. I have been grating fresh raw ginger on my salads, in my miso soup and over top just about everything lately. (Ginger + lemon + roasted beets = YUM!) Raw ginger is warming and soothing. Stimulating yet settling. I love it. And fresh ginger pairs so nicely with sweet strawberries. This fruit salad and sunny day lunch/breakfast or brunch tartine is one to crave. Easy to make!..

Ginger-Mint-Lemon Strawberry Salad Avocado
vegan, makes 4 1/4 cups

3 cups fresh organic strawberries, sliced
1 small avocado, diced
1 large or 2 small lemons, squeezed + pinch of fresh lemon zest
1/8 tsp fresh raw ginger, grated with a microplane
splash of grade B maple syrup (optional)
1 Tbsp fresh peppermint, finely chopped + a few leaves as garnish
2-3 Tbsp raw organic hemp seeds (optional)

for tartines: add your favorite toast to serve (optional: drizzle of your favorite oil like macadamia nut, pumpkinseed or EVOO)

(You could also do "deviled avocados" and stuff avocado halves with this fruit salad - hemp seeds on top!)

Directions:

1. Wash and slice berries, removing tops. Place in large mixing bowl.
2. Add diced avocado, lemon juice, ginger, mint and maple syrup.
3. Fold well. Let marinate at least a half hour for best flavor. I place in fridge to marinate and chill.
4. Serve!

Ideas:
* Add hummus to your toast before adding the berries and avocado salad on top.
* Try sprouted grain toast for extra nutty flavor.
* Add raw walnuts for an nuttier salad.

Blueberry Amazing cake!!!

Blueberries. Blueberries are amazing little fruits. One cup contains about 80 calories and zero fat. 4g fiber and 24% of your daily vitamin C needs. They are rich in vitamins C and K - and they also contain smaller amounts of various B vitamins and vitamin E. They are rich in manganese and contain some potassium too. Blueberries are quite amazing based on their strong antioxidant capacity. Beyond the rigid nutrition data facts - the power of blueberries is in their color - their phytonutrients.

Blueberry Cake
vegan, makes one 9" round cake

1 1/2 cups organic white flour
*sub with other flours if desired
3/4 cup sugar, organic (why organic here)
1 Tbsp baking powder
3 Tbsp vegan butter, softened
1/2 tsp almond extract (sub with vanilla if desired)
3 Tbsp rolled oats
2 Tbsp flax seeds + 2/3 cup warm water
1/3 cup soy milk, vanilla
1/4 cup applesauce, unsweetened
3 Tbsp orange juice + pinch orange zest (fresh squeeze room temperature oranges - or warm OJ to about room temp)
1/2 tsp salt
optional: 1/2 tsp cinnamon

fold -ins:
1/2 cup blueberries
1/2 cup chopped walnuts (or almonds)

topping: blueberries +pinch rolled oats + sprinkle of almonds

note: I used about 10 ounces blueberries total - buy 2 6oz packs and eat any leftovers :)

Frosting:
1/3 cup vegan butter, softened
2/3 cup virgin coconut oil
3 cups powdered sugar
pinch salt

note: if you only use coconut oil this frosting is STILL super yummy. You could also add in or sub in some vegan cream cheese if you'd like.

Directions:

1. Preheat oven to 350 degrees.

2. Add flour, baking powder, salt, sugar, oats and optional cinnamon to a large mixing bowl. Toss a bit.

3. In a small dish, combine the water and flax seeds. Stir briskly and let sit for about 2-4 minutes.

4. Add the water/flax mixture, orange juice, applesauce, vegan butter, salt, extract and soy milk. Tip: try to make sure these ingredients are either room temperature or slightly warmed. I used room temperature oranges to fresh squeeze - and room temp applesauce. This will help your batter blend more seamlessly - and the vegan butter will stay smooth.

5. Stir your batter by hand until smooth. Fold in the blueberries and chopped nuts.

6. Pour your batter into your cake dish - grease and flour the sides before pouring.

7. Bake at 350 degrees for about 25-30 minutes - or until edges begin to brown a bit. Remove from oven to cool.

8. Start your frosting about 20 minutes before you want to frost your cake. Your cake must be cooled when you frost it or the frosting will melt.

9. Add frosting ingredients to mixing bowl and blend with hand beater mixer until fluffy and smooth. Add in a splash of room temperature soy milk or coconut milk if needed to thin out the blend. Place frosting in fridge for just about five minutes before frosting. Any longer and the frosting will get too firm.

10. Frost cake and add blueberries on top. Serve with softened frosting. Store in fridge - but allow frosting to soften a bit before re-serving from fridge.




Coconut Cream Cashew-Chai Pancakes



Up early, like watch-the-sunrise early, I made these amazing Coconut Cream Cashew-Chai Pancakes.

..because when one wakes up early on a Saturday, One must make pancakes. I think it's a rule.

No boring pancakes today thank you. These are luscious, coconut-maple-cream-filled, pillowy-stacked, cashew-studded, chai-essenced, coconut-dusted, kamut pancakes.

I used a Kamut grain vegan pancake mix - I adore kamut. And these are easy! Lets put it this way, I got out of bed at 8am and was photographing these babies by 8:30. Fast and yummy for a happy Saturday morning feast...










Kamut. I am in love with kamut pasta - so I decided to try kamut pancake mix. It has the same texture and consistency as a buckwheat pancake - perhaps a tad lighter. I was very impressed with the nutty sweet flavor of the pancakes. You can use any pancake mix you'd like. The one I used (Arrowhead Mills) basic ingredients: kamut flour, baking powder, dry soy milk powder, salt. 6g protein and 2g fat and good stuff like 8% RDA of iron and 20% RDA of calcium per 1/4 cup mix.

Then comes the coconut-maple cream filling. I used light coconut milk and made a stove-top thickened creamy sauce. A generous dose of maple syrup and cinnamon and suddenly my basic kamut pancakes become dessert-inspired and dreamy.

Coconut Cream Cashew-Kamut Pancakes

Pancakes
1 cup Kamut Pancake Mix
1/2 cup almond milk, plain
1/2 cup chai tea concentrate (or sub with more almond milk + 1 Tbsp sweetener)
2 Tbsp agave or maple syrup
dash of cinnamon
1/3 cup roasted/salted cashews
2 Tbsp oil (I used grape seed, canola works well too)

Coconut Cream
1 1/4 cups light coconut milk
dash of salt
1 Tbsp corn starch
4-5 Tbsp maple syrup

dusting: raw unsweetened coconut shreds

Directions:

1. Make your coconut sauce by dissolving corn starch into the light coconut milk. Add in the cinnamon and maple syrup as well. Heat in a soup pot - constantly stirring until thickened. I like to run a beater through my sauce to make it extra light and silky. Pour into a dish and chill in the fridge until needed. I like my sauce to thicken up a tad in the fridge - but still stay loose enough to drizzle nicely on the pancakes.




2. Next up you need to mix your pancake mix in a large bowl. Fold int he nuts. Then grease a sauce pan and start cooking your pancakes over a medium flame. If your pan is too hot the pancakes may burn more than you'd like. Transfer pancakes to paper towel to cool for stacking.



3. Assembling your stack is fun! First do a light dusting of coconut shreds. I use raw unsweetened organic coconut shreds. Then add one pancake, a dollop of coconut cream from the fridge and repeat until three layers have been created...





4. Top with coconut. Serve warm!
