friends & salad

i've been eating a lot of salad lately. our greens are growing like crazy so i can run out to the garden and pick some lettuce and spinach whenever my heart desires. my friend christine came over yesterday and we made a lovely mix of greens, cucumber, tomato, olives and mushrooms. it was nice to catch up with her, since we hadn't seen each other in awhile.

she's all cool and awesome so she made this photo:


i also added some oregano, basil and cilantro. i think sweet basil may be my favourite conventional herb. my mom's is cilantro. i tear the herb leaves up really small, so it's lovely when you get a bite of salad and every now and then there's a hit of basil or what ever.

mmm...


oh goodness. i just ate a salad (a lot like the one above) but these photos are making me want to make another. i think i actually might. because after i finished eating the first one (just now) i went into the kitchen and realized my friend amber had left two avocados as a gift.

because she's the best.

she's also all hip, so she took these trendy hipster pictures last night: 


as far as salad goes, it's pretty much the greatest thing ever. except maybe for avocados. so when you combine them both - it's almost too much to handle. almost.

i'm definitely going to go make another giant salad now. 
i hope you have an amazing weekend! here's an easy and delicious recipe for you:

green love salad: serves 1-2

1/4 cup cherry tomatoes
1/4 cucumber
1/2 cup mushrooms
4 tb olives
1/4 red onion
5 figs
1 handful of fresh herbs like basil, oregano, cilantro, lemon balm, rosemary, etc. 
5 cups or more of fresh, organic greens like lettuce and spinach

chop up the tomatoes, cucumber, mushrooms, olives, onion, figs and herbs to your liking. set aside. 
in a big bowl, pour a little balsamic vinegar and olive oil on the greens and mix them up with your hands, coating them all with the dressing. throw on the chopped goodies and enjoy! 
this is best enjoyed outside on a sunny day, right beside your garden.

i usually add hemp seeds and sometimes salt and pepper. 

oh! and avocado. duh.

the ellusive kale chip


Rarely is the kale chip able to be photographed. It lives a short but full life of passion, love and flavour; until it is quickly destroyed because of it's own irresistibility. Tragic for the kale chip - oh so delicious for its hunter. 

If kale ever becomes extinct - you can blame me.

When it comes to kale chips, I am a merciless hunter. I ferociously eat every one in sight, often not pausing to breathe, until before I realize it - 3 bunches of kale have disappeared. Every time I make kale chips I say to myself "Okay Emily, THIS TIME you need to leave some for others." 

It never works.

Today I wanted to make kale chips because I had extra Pad Thai sauce and Hemp Sauce which I planned on using as the dressing. Well, my mom and I went to the market and bought 3 bunches. When I got home this evening I dressed them all and stuck them in the dehydrator to blossom into glory.

I tend to eat them at all stages - when they're totally fresh with just the dressing on, when they're starting to soften and get gooey as they warm up, and when they're finally a crunchy chip. So by time they reach the last stage, most of them are gone anyway. Then before I know it, I've eaten the rest. This is why I never have pics of kale chips on my blog.

You have no idea how much will power it took to NOT eat these chips before I took pictures, AND to save a (very small) bowl for my mom for when she got home.

Anyways: moral of the story - kale chips are ADDICTIVE. Be careful.


They don't stay around for long. 


If you want a recipe for les chips, just use any sauce recipe I have on the blog, and put it on a bunch of ripped kale pieces. Then dehydrate for a couple hours or until they're crunchy.

If you wanna make your own sauce, I recommend making a blend of tamari, lemon, garlic, miso, nutritional yeast, nut butter, and some spices. It makes a cheesy, salty dressing... mmm =)

Here's some of my recipes for dressings: Spicy Thai Sauce and Creamy Hemp Sauce. And this is my basic recipe:

Kale Chips: serves...?

3/4 cup cashews
1/3 cup nutritional yeast
1/2 T curry powder, or any other spicy powder you adore
1 T miso
Splash of Bragg's Liquid Aminos
Juice of 1 lemon
1 teaspoon salt and pepper
Clove of garlic, chopped
Water, as needed
2-3 bunches kale

Blend all ingredients - except kale - in blender until creamy and smooth. It should turn into a thick, delicious, saucy thing... unless you or I forgot an ingredient. Add other things to your liking. Set aside.
Wash kale and break into large chip sized pieces (they will shrink a lot). Put in your biggest bowl and throw in the sauce. Mix it in with your hands - this is surprisingly enjoyable - until all the pieces are evenly coated. Try one...

Yep. I know. You're gonna eat 'em all.
 
Now put them on dehydrator trays and dehydrate for a couple hours, or until they're crispy. If you don't have a dehydrator, just use the lowest temperature on your oven.

mmm... salad for life

Hello beautiful people! Nothing fancy or in-depth today (not that my posts usually are...), just salad =)
I took some lovely pics and wanted to share.

WHY IS SALAD SO GORGEOUS!? ...I know of many reasons, actually.

Every time I have salad (i.e. every day), I have to dance around and show everyone because it's so awesome - literally. Just throw some fresh greens together with a simple dressing and tons of veg. What do you get? Perfection and happiness. In a big, blue, clay bowl.

chocolate protein truffles & green smoothie recipe

Not that I'm back to my crazy workouts (it was just a matter of time... I'm an addict), I have to make sure I get enough protein. If I weren't raw, it wouldn't be something I'd have to think about.

Most people actually get 5 times more protein than they need everyday (USDA, 2005).

But the fact that I am raw PLUS my workouts are really intense, my protein intake is something I need to watch. Mostly because I love muscle, and always want more =)

One way I do this is by adding protein powder to my already protein-packed green smoothies, with hempseed and flax. I DO prefer getting protein from unrefined sources; even though my protein powder is high quality, it's still processed.

When I'm done with this container of powder, I'm not buying anymore. From now on I'll just be getting protein from nuts, seeds and greens (which I partly do already).

Yay! In nature, there aren't protein powder trees. Wouldn't that be nice though?


After my workout today - which involved plyo-metrics, kickboxing, yoga and weight training - I made a DELICIOUS green smoothie and gulped it down. Then I stretched and watched the end of a Doris Day movie.

I could feel my muscles calling for some more building materials, so I decided to make a chocolate-y treat with mostly oats, nuts and rice protein powder. They're turned out like truffles because I rolled them into balls and coated them with cocoa =)


Protein Truffle Bombs: makes about 50 small balls
1 cup oats
1 cup mix of brazil nuts, cashews, peanuts or whatever nuts you like
1/4 cup cocoa/cacoa
2-3 scoops of fave protein powder
3 Tb agave
1/2 cup soaked dates
1/4 cup water (or more/less as needed)
1 t vanilla
Pinch of salt
1/8-1/4 cup coconut oil
Cocoa/cacoa for rolling

Process all dry ingredients until they're like a super hefty flour. Add all other ingredients and process/mix by hand until they're like cookie dough. Roll into balls and roll in the cocoa until coated. 
Chill for an hour or so. Or just eat them right away. I probably devoured half the batter while I was making them... 

Berry Green Smoothie: makes around 3 1/2 cups
3 loose cups of spinach
4-5 leaves of kale
Grapefruit, peeled
Lime, peeled
Banana, frozen
1/4 cup frozen berries
1/2 cup pomegranate juice
Stevia if desired
2 T peeled ginger 
Handful cilantro 

Blend all ingredients until smooth! Sip and enjoy good health! Dang IT'S SO GOOD.

green ocean of life

Thought of those words after I poured this smoothie. They're always this beautiful but I HAD to show this one. How can you not want to become this?! It's an ocean of nutrients and vitality!

Green Smoothie: makes about 4 cups

1 peeled lemon
1 peeled orange
3 cups dino kale/rainbow chard
1 frozen banana
2 cups water
pinch of stevia
half cucumber
handful of cilantro
chunk of peeled ginger

Blend it up and absorb the energy!
