super food energy bars with cacao


These are chock full of super foods to provide your body and mind with long-lasting energy to get through your busy (or leisurely) day. What have they got? Chia seeds, flax seeds, hemp seeds, pumpkin seeds, walnuts, cacao nibs, raisins, dates and coconut. You can't beat this recipe as far as nutrition goes. Try to find organic varieties of each ingredient - and of course raw! 


I was snacking on the mix as I made the recipe and immediately felt a difference, they gave me enough strength to get through a workout and then they made an excellent post-exercise snack, paired with my green protein smoothie. I had a bit of extra mix that I shaped into tiny cupcakes and I thought... hey, I could top these off with dark chocolate to make it a sweet super food treat. Done. 


If you want real, raw, cruelty-free, high quality, efficient and delicious energy bars - you've got 'em right here. Don't look at those sugar- and refined protein powder-filled candy bars in the grocery store that for some inexplicable reason happen to be called "power bars". It's a joke. The best brand on the market is the Larabar (or the Clif bar for more protein) but you can make better recipes yourself, plus add in a bunch of other awesome ingredients. You've got the power! Get it...


super food energy bars with cacao: makes about 15 bars

1 cup walnuts
1/3 cup chia seeds
1/3 cup ground flax seeds
1/3 cup hemp seeds
1/4 cup cacao nibs
1/4 cup coconut flakes 
3/4 cup pumpkin seeds
1/2 cup raisins
1 cup dates 
1-2 tablespoons melted coconut oil, if needed

Throw the dry ingredients (keep a little bit of each ingredient to add in a second) in your food processor, then add the dates and raisins and process until everything it starts to stick together. If too dry, add more dates or coconut oil. Put in the remaining dry ingredients you left out and mix in with your hands. Press into a lined pan and set in the fridge for an hour or more. Cut into bars and store for up to one week. If you have extra, shape them into cupcakes and top off with raw chocolate.

apple sandwiches with date caramel + almond butter


These are really fun to make, and super healthy. Oh and as you can tell from the photos - so easy they hardly need instructions. Slice up some apples and layer them with caramel and almond butter. Yum! Make these with kids and you will make some new little friends. 


They actually taste like candy or something... it's almost too good to be true. But then - isn't zucchini pasta almost too good to be true? Yes. Yet it exists. Thanks, Mother Nature and innovative kitchen equipment. So eat as many of these as you want and feel great afterwards about yourself and your awesome healthy, humane, eco-friendly choices.


apple sandwiches with date caramel + almond butter : serves 2 to 4

4 apples
Almond butter or other nut butter

Caramel:
1/2 cup dates
2 tablespoons liquid coconut oil (or use water... won't be as creamy though)
1/4 teaspoon salt (optional) 
1/2 teaspoon vanilla

Make the caramel: blend all ingredients until smooth. 

Assemble: Slice the apples thinly from bottom to top and then core each piece. Now layer each slice with alternating caramel and nut butter. Enjoy!

baked yam & tofu with purple rice, kale pesto & sprouts

This recipe is super simple and super delicious! This a prime example of how to eat a whole foods, plant based diet with an emphasis on raw food. After working out, I enjoyed my regular green smoothie. An hour or so after that I was needing something heavier, with a fair amount of protein to rebuild my muscles. The perfect meal for this is some thing that has a vegetable, a grain, and a protein - top it all off with something green and your body will be praising you! 


baked yam & tofu with purple rice, kale pesto & sprouts: serves two

Kale pesto:
5 cups kale
1/2 cup pine nuts
1 tablespoon walnut oil 
3 tablespoons nutritional yeast
Salt, to taste
Water, as needed

The other stuff:
1 yam, peeled
1 package of tofu
1 1/2 cups cooked purple rice
Handful sprouts 

To make the yam and tofu: cut them into bite size chunks and toss in a tiny bit of olive oil, tamari, maple syrup, liquid smoke, and salt and pepper. Bake at 350 degrees for about 20-30 minutes or until the yam is soft. 

To make the pesto: pulse all in the ingredients in your food processor until it becomes pesto. SO GOOD. Serve with the yam, tofu, rice and sprouts - enjoy!

banana strawberry milkshake


After my workout today I enjoyed a delicious strawberry milkshake with creamy bananas and Vega protein powder. Usually I add greens like fresh kale or spinach but alas - we had none. So a pink smoothie it was! Pretty refreshing, if I do say so myself. You already know how much I worship smoothies so I won't get into a rant about their holiness. I'll just leave you with the recipe and the promise of a really yummy Peanut Butter Coconut Cup recipe that I will share tomorrow. I think I've eaten like 4 today... 


Banana Strawberry Milkshake: serves one

1 banana
1 cup vegan milk or water
1 cup frozen strawberries
1 scoop protein powder or hemp seeds (optional)

Add more or less of everything depending on your preference. Blend it all up in your high speed blender and sip away. Watch for the brain freeze though... I learned my lesson 3 times over while drinking this - it's so tasty I can't stop.

chocolate berry protein smoothie


As we all know (or I should hope anyway) part of a healthy lifestyle is incorporating exercise in to every day. It doesn't have to be much, 30 minutes of power walking, weight lifting, running, hard core dancing, etc. all can suffice. Get your blood pumping, your lungs working and your heart beating. I love getting my sweat on.

Exercise is vital for a long, healthy, happy and rich life. It helps you sleep, look good, feel good and does absolute miracles for your bod. Trust me. Try to get in 10-30 minutes of exercise per day - you won't regret it. 


Now why am I talking about getting my sweat on? Who cares? Well, I'd like to think you do. Now if you have just worked out and want some delicious, raw, whole food nourishment - try this recipe. The perfect meal to consume right after exercise is a smoothie. Preferably with fruit, dark leafy greens and some kind of protein. I love hemp seeds and several different vegan protein powders. Why? Because your body needs to replenish the calories it just lost, and also repair the muscle tissue that was damaged when you worked out. I know that sounds scary but it's all good. When you eat protein and carbs after a workout, the protein works to repair and improve your muscle - that's how you get guns! The carbs (in fruit) replenish calories lost. Your body can effortlessly take these in when in smoothie form because there's almost no digestion needed - just absorption. I give you a basic post-workout smoothie recipe below, using Vega protein powder

I know some raw foodists strongly believe we should not have to use protein powders because we can get all our required protein (which actually isn't that much, contrary to public belief) from entirely whole foods. I don't like to hold convictions for any case, and this one isn't special. Everyone is different - some people do fine without extra protein powder, some don't. I like to use it because it helps me build muscle faster and more efficiently. Also, I don't want to have to eat bowls and bowls of spinach and broccoli all day. 

I am NOT saying you can't get enough protein on a raw vegan diet unless you have protein powders. Definitely not. But if you work out a lot you need to repair your muscle tissue with protein, and the most efficient and convenient way to do that is with protein powder. Also, it's not like it's this terrible over-processed food. You can find loads of excellent brands out there that gently process whole foods into clean and simple powders. Of course, there are also some sketchy GMO soy isolate proteins which I do not recommend. I love Sun Warrior, an all raw powder, and Vega (also it's creator and pro athlete - Brendan Brazier. Read his book, Thrive).


chocolate berry protein smoothie: makes about 4 cups

2 cups kale
1 cup frozen blueberries or other fruit
1 banana
1 scoop chocolate vegan protein powder 
(or 2 tablespoons hemp seeds + 1 tablespoon cacao)
1-2 cups water, as needed

Blend all of the ingredients in your high speed blender (like a Vitamix) until smooth, then enjoy!

protein party

this bowl is packed full of protein for your muscles! it has banana, nut butter, goji berries, coconut, and cacao nibs. it's terrific for after a workout, or whenever you want a filling, super healthy snack or meal.

i believe the perfect post-workout food is a green smoothie (greens, fruit and water/nut milk) with hemp seeds or some other high-protein food added. That being said, you need a variety of protein in your diet, just as you need a variety of all foods so you can get the most out of the nutritional landscape surrounding us.

after my workout today (and said green hemp smoothie) i did a few things around the house and on the computer but then started to get hungry again. i decided to make a healthier version of oatmeal. NOT that oatmeal isn't healthy. i've always loved it, personally. but i try to keep gluten out of my diet when i can, and use the most nutritious whole grains possible. thus, my "oatmeal" today had millet quinoa.


or maybe couscous... honestly i can't tell the difference because i don't use grains that much and the jar wasn't labelled. but you get the point. when i first got into raw food i was a whole lot stricter than i am now. i realize i can't eat 100% raw all the time and i am now quite comfortable with that reality. i also believe that eating mostly raw with some lightly cooked veggies and whole grains is probably more ideal for my body than eating all raw.

many hard core raw foodists suffer omega-3 deficiencies after some time, but whole grains such as quinoa, millet, barley, couscous, etc. are rich in omega-3's (as well as other vital nutrients that can be in short supply in a raw food diet). read this book for more info on this topic. another option is to simply sprout these grains instead of cooking them. in any case - my health is my primary concern, not the percentage of raw food i eat. so go couscous! ... or millet. i dunno (nope, apparently it was quinoa. thank you, knowledgeable readers.)


whole grain protein bowl: serves one

1/3 cup whole grains (like millet, couscous, quinoa, oat groats, etc.) cooked in 2/3 cup water
1 sliced banana
1 tablespoon nut butter
1 tablespoon raw sweetener (or throw in some dates or raisins)
2 tablespoons dried goji berries
1 tablespoon cacao nibs
3 tablespoons dried coconut chunks 

throw it all together and eat it up!

holy garlic

we bought garlic from the farmer's market on saturday... it is so intense. like, the most potent garlic on the planet. i naively used an entire clove in the dressing of my salad, i have now killed all my taste buds. learn from my mistake - be cautious with your organic garlic. start with half a clove if you've got strong stuff.


besides the garlic insanity, this salad was friggin delish. i had a great workout up at my campus gym and all i wanted to eat afterward was a big salad from my garden. i added some chickpeas for extra protein. hemp seeds would also be a nice addition. we had grilled zucchini from last night and well... that's never a bad thing to throw in. enjoy! i sat in the sun and fought with wasps to eat this.


walnut garlic salad: serves one

dressing:
1 tablespoon mustard
1 tablespoon tamari
3 tablespoons almond milk (or water)
1/2 garlic clove
1 tablespoon miso 
1 tabelspoon honey/maple syrup (or 2 dates)
1 tablespoon hummus (optional... but yum)

salad:
2-3 grilled zucchini slices
1/2 cup chickpeas
4-5 cups kale and/or rainbow chard
2 figs
3 olives

make the dressing by blending all ingredients until smooth. hopefully you like it, it might be a little thick so feel free to add more liquid. chop up the salad topping and tear up the leaves into bite-size pieces. pour on the dressing and mix into the greens, then add your toppings. yummers.

garden kale salad

we have so much kale in our garden.


this is not a problem though, i could eat it all day... and i do. i use it in smoothies, wraps, kale chips, soups, and salads! mainly in smoothies though. so yesterday i figured i make it into a salad instead of the usual green smoothie. oh wait - i had a green smoothie for breakfast.

but still.

dino kale is a bit bitter and tough for regular salad greens so what you do to make it all nice, soft and flavourful is massage your dressing in and let it sit for a few minutes. i did that while i cut up my other salad ingredients. they included: THE BEST TOMATOES EVER, grown on our deck. i also added some bell pepper, beans, and gardein because well... i like the taste. my dad thought i had put real chicken in the salad for a second. hah.

garlic kale salad: serves one

salad:
1 large organic tomato
4-5 cups organic dino kale
1 organic bell pepper
1/2 cup cooked chickpeas (or throw in some nuts to keep it raw)
1 serving of tempeh or gardein (optional) 
handful of raisins

dressing:
1 tablespoon miso
1 tablespoon mustard
2 dates
handful of walnuts
3 peeled garlic cloves
1 tablespoon tamari
water, as needed 

chop the veggies and kale, set aside. to make the dressing blend all ingredients until smooth. i hope you like it! then massage the dressing into the kale and let it rest for a 5-10 minutes, getting soft. put the tomato, pepper, raisins, chickpeas/nuts and protein on top and enjoy!

goji coconut brownies


before i start telling you about brownies - have you heard the new fleet foxes album!?

every single freaking song is amazing and resonates deep within my soul. that's all there is to say. my friend is going to give me his old record player (so excited!!!! he is the best) and helplessness blues may be the first record i buy. here's a song from the album, it's got a beautiful video to go with it.


on to food. as you may have noticed - i have been eating predominantly salad the past few weeks, and this has yet to stop. all the salads i make are so gorgeous i have to take pics and show you. i don't care if you don't wanna see them. i will force you.

just look at it!


it was an excellent meal, as you should assume. for dessert i made these guys:


they are really yummy, as you should also assume. i put coconut, goji berries, almonds, cashews, hemp seeds, prunes and cacao in 'em. simple, delicious and nutritious. they are disappearing pretty rapidly. 


goji coconut brownies: makes... enough

1/3 cup goji berries
1/2 cup coconut chunks
3/4 cup almonds
3/4 cup cashews
3 tb hemp seeds
1/3 cup cacao
6 tb mesquite powder
1 t cinnamon
1/8 t cayenne 
1/2 t Himalayan salt  
1/4 cup dates
1/4 cup prunes
2 tb melted coconut oil
a bit of agave, maple syrup or honey (if you like)

in a food processor, pulse nuts into crumbs then add the dates and prunes and wait for the mix to start sticking together. add all the other ingredients and see if you like how it tastes. if so - awesome! (if not, change to your liking) then press into a lined pan and refrigerate for 1 hour. 

or eat them right away.

lavender vanilla dream balls

i dreamt about these, woke up and wrote down the recipe, then went back to sleep. hence the "dream" part of the title. all my dream recipes are so much better than reality ones.


these were a big hit. my family loved them and so did my friends. i really tried to do something sans chocolate, but hey - can you blame me? i'm sorry i dipped these delicious, healthy treats in dark chocolate.

sue me.

you can leave out the chocolate, but - no surprise - i recommend adding it. chocolate and lavender seem to like each other, and who am i to deny them a great relationship?


for some reason the coconut oil in these did not want to be part of the party. i only put in about 2 tablespoons but it wouldn't combine with the other ingredients! you can see it soaking into the cutting board... hopefully this won't happen for you. start with 1 tablespoon and see what it does.

after rolling out all the balls with my friend, we had coconut oil dripping from our hands - literally! so i just rubbed it all over my body. yum! i love when the food i eat is also the stuff i put on my skin to keep it glowing and healthy. like avocados, bananas, oats, papaya, lemon, mango, etc.


vanilla lavender balls: makes around 25?

1/2 cup coconut chunks
1 cup walnuts
1 cup cashews
3/4 cup dates
1-2 tb melted coconut oil
1-2 tb agave/maple syrup (optional)
1/2 t salt
1/2 t cinnamon
1/8 t ginger powder
seeds from 1 vanilla pod
2 t vanilla extract
1 t dried lavender
2-3 tb hemp seeds

in food processor, process coconut chunks and nuts until they're crumb sized. add dates and pulse until it clumps together. add all other ingredients and process until it forms into a ball.

roll this into balls and then dip in raw chocolate, or melted dark chocolate. stick 'em in the fridge for maybe 10-15 minutes and then gobble them up.
