BANANA ICE CREAM SUNDAE with CHOCOLATE SAUCE


I hope I made your mouth wet with these photos. Wink wink. Best part of this recipe is that it's incomparably healthier than the average breakfast. It's basically just bananas and a bunch of super foods like coconut oil, almonds, cacao powder, and mulberries. You can add whatever else you like (ideas: goji berries, coconut flakes, maca powder, fresh fruit, dates, etc.) I ate this for dinner.

That's right. GIFs are happening right now. I saw them on this blog awhile ago and immediately realized how genius it was for food photography. A huge component of the appeal of food is texture! You can show it perfectly with moving images. Plus, they're really fun to photograph and put together. Besides, I know you like 'em.

I stayed home from school today because I think my mono might be coming back (I know - coming BACK... this isn't the first time I've suffered this throat torture) and figured I'd better rest to keep it maintained. Banana ice cream is the perfect soother because it's cold and creamy. Ahh. It helped me get through my last Mononucleosis bout.

Mononucleosis kind of sounds like a super power... Or is that just me who thinks that. I cannot explain my own cognitions. Moving on.


banana ice cream sundae with chocolate sauce

Ice cream:
3 frozen bananas 

Chocolate sauce:
1 tablespoon melted coconut oil
1 tablespoon cacao powder
1 teaspoon agave syrup or preferred sweetener

Toppings:
Almond butter
Mulberries
Anything else your heart desires

To make the ice cream: put the bananas in a high speed blender and blend until they become a creamy, fluffy, white soft serve ice cream. Nom. Scoop into a bowl.

To make the chocolate sauce: whisk the ingredients together. Drizzle over your ice cream along with the rest of your toppings. Time to spoon.

joni mitchell & a flower sundae


my past week was absolutely glorious. it was filled with beautiful people, splendid weather, delicious food, learning, growing, renewing and sleeping! having said that - i am now rather tired and burnt out. i may just drink juice tomorrow and have a nice mellow sesh of yoga. i spent the weekend mostly with my boyfriend.

ah, "young love". 

he had a small party where i had the privilege of meeting his charismatic comrades and the rest of the long weekend (monday was off because of remembrance day) we enjoyed the lovely, warm company of his childhood friend and HIS beau. we ate eggplant and quinoa, made art from national geographic magazines, watched a cohen brothers film ("barton fink" -  i highly recommend it!) and i personally was thanking the weather deities that winter is finally arriving! i hope with all my might that it snows soon.


finally got home this morning and studied non-stop until i had to go to work. but when i arrived home i found this little delight my desk! it was a gift from momma! she loves joni mitchell and i have a feeling i will too after i read her poems. i will enjoy her thoughtful mind with some lulling tea tonight. now - onto ice cream!


i mostly just made this tonight so i could give you guys some nice photos and something to (hopefully) salivate over. as i said, i was away the whole weekend and missed posting any recipes or pictures! apologies. i threw together a quick sundae and added some edible dried flowers. 

at least i THINK they are edible...

 

um, nevermind. i'll worry about that later. this sundae consists of vanilla coconut ice cream, a salted chocolate sauce, pine nuts, flowers, and a few dates filled with fresh cashew butter. seriously, i made the cashew butter while the ice cream was thawing. needless to SAY - it was delicious! i shouldn't have eaten all of it but... well, you know me.

here's some more free and excellent reggae dub to chill out too. it is never a bad time to play reggae dub. i want it played at my funeral. party.
 

flower sundae: serves one or two

1 tablespoon almond butter
1 tablespoon cacao
1 tablespoon raw agave/maple syrup 
1/4 teaspoon salt
water, if needed 
3 scoops coconut ice cream
3 dates filled with cashew butter
pine nuts
edible flowers 

to make the chocolate sauce, stir together the almond butter, cacao, agave/maple syrup and salt. sprinkle on all the other ingredients (including the chocolate sauce) onto your ice cream.

super food sundae

Wouldn't it be wonderful if you could indulge in your favourite guilty pleasures (like a giant ice cream sundae) but feel GOOD about yourself for doing so?

Guess what, folks. You can!


This ice cream is made of mainly coconut and cashews; the chocolate sauce is agave, cocoa, and coconut oil; and I topped it off with figs and cashews. If you Google any of those ingredients, you'll find that everyone says you should eat more of them.

I ate this up and enjoyed every bite, knowing it was bringing me better health. You should too! And mix it up anyway your healthy heart desires. You could use nut butters, berries, bananas, different kinds of ice cream, whipped coconut cream, whatever!

Below I give recipes for my raw ice cream and chocolate sauce, but it's a sundae so there's no rules. 

Raw Vegan Ice Cream: makes about 3-6 servings

2 cups soaked raw cashews 
Coconut meat from 2 young Thai coconuts (about 2 cups)
1 cup of water/coconut water from the coconuts - don't use more
1 cup agave/maple syrup
Seeds from 1/2 - 1 vanilla bean (I love vanilla so I use a whole one)
2 T vanilla extract 
1/2 teaspoon salt
1/4 cup plus 1 T or so of coconut oil, melted

Blend all ingredients except coconut oil in your blender (Vita-Mix works best!) until lusciously smooth and creamy. Melt coconut oil in a bowl that's sitting in a larger bowl filled with hot water. Add in and blend until mixed. Try it now... Yeah. I know. 

Now try to resist eating it all before it's frozen: if you have an ice cream maker use that. 

But if you're like me and don't have one, put the batter in several small jars or freezable containers (single servings!) and stick them in the freezer. Check back every 30-60 minutes and stir until they are eventually frozen, creamy delights.

Chocolate Sauce: Makes a small bowl

3 T cocoa/cacao
3 T melted coconut oil
2 T agave/maple syrup
1 t vanilla extract 
Pinch of cinnamon and salt, if you want
Coconut flakes, if you want 

Mix it all together and enjoy! Feel free to add anything you want to it, the possibilities are endless.
