zuke pasta with tahini sauce & other goodness


I used basically the same recipe for the sauce that I made for my raw sushi recipe. It is so TASTY. This creamy, filling meal will leave you satisfied and full of energy. I could eat like 3 bowls of this - oh and guess what, I can! Ah, life is good. Enjoy!


zucchini pasta with tahini sauce, olives, cilantro & avocado: serves one or two

Pasta:
2 zucchinis
1/2 avocado
handful of olives
1 tablespoon hemp seeds
1/2 cup cilantro
1/4 cup sprouts

Tahini sauce:
2 tablespoons tahini
1 tablespoon miso
2 tablespoons peeled ginger root
1 tablespoon tamari
1 tablespoon agave nectar
1/8 cup water (more or less)


To make the sauce: blend all ingredients until smooth and creamy, adding liquid as needed. Set aside.

To make the pasta: slice your zukes on a spiral slicer or mandolin. Put in a bowl and pour your sauce on, rubbing it in with your hands or two spoons, until every noodle is covered. Cut up your avocado and throw it on along with the other toppings. Let it all sit for a minute to marinate then dig in!

yam noodles with sweet sauce, marinated mushrooms & sesame seeds


This was a quick dinner I just whipped up after a (strangely) long day. The recipe needs no pre-planning because I didn't even know I was going to make it until I stepped into the kitchen and noticed we had yams. I was going to make a salad but then I'm like... "Hey, yams, you be lookin' pretty fine today. Imma spirooli you up and cover you in sweet miso sauce then put you in my mouth. Whaddya think?"

And so, my dinner was born. 


My favourite type of plant to turn into noodles is (probably expected, sorry) - zucchini. It is PERFECT for pasta. It has the right texture, taste and appearance to fool all your complex-carb-inclined friends. Having said that, I still love turning yams, bell peppers, carrots and other willing veggies into spiralized goodness. It's just so fun and you can be uber creative. 


yam noodles with sweet sauce, marinated mushrooms & sesame seeds: serves one

marinated mushrooms:
4 mushrooms
1 teaspoons sesame oil (optional but recommended) 
1 teaspoon tamari

sweet miso sauce:
2 tablespoons of nutritional yeast
1 tablespoon agave/maple syrup/raw honey
1 tablespoon miso
1 tablespoons hummus (not raw, too bad)
1 peeled garlic clove
2 tablespoons mustard
3-5 tablespoons water, as needed
1 tablespoon sesame seeds

Yam noodles:
1 peeled yam

To make the mushrooms: slice them really thin then rub in the oil and tamari. Put them in a warm spot (I put them in my oven at its lowest temperature) and forget about them for a minute. 

To make the sauce: blend all ingredients except sesame seeds together until smooth. Add whatever else you want. Then toss in the sesame seeds by hand. Set aside.

To make the noodles: put the yam through your spiral slicer (spirooli) or slice on a mandolin  Then cover them with the sauce and them get to know each other for a few minutes. The noodles will soften and pick up more flavour. Now remember your marinating fungi friends being warmed somewhere? Add those on top, and sprinkle on some more sesame seeds and raisins. Yum. Yams, man.

pumpkin seed & garlic pasta


the possibilities for zucchini pasta are endless; much like salad and smoothie recipes. this time i used pumpkin seeds and garlic for the base of the sauce. of course - the noodles are just zucchini! i topped it off with raisins, chives and spiced almonds.

i usually make 2 small zucchinis for myself. one of the many aspects of raw food i love is the huge amount of food you can eat. veggies and greens are so low calorie it's pretty much impossible to get adequate calories from them alone. so most of my diet ends up being fruit. then of course i have nuts and seeds in my desserts, and sometimes some whole cooked grains to balance out my omega-3's.

as joel fuhrman explains - the higher ratio of nutrient to calorie in a food, the better it is for you! so plants like zucchini, eggplant, any greens, mushrooms, tomatoes, etc. are super low-calorie but super high in nutrient density. they will keep you living long! and holy guacamole (see what i did there?), do they taste good...


zucchini noodles with pumpkin seed & garlic sauce: serves one or two

noodles:
2 small zucchinis 

sauce:
1/4 cup raw pumpkin seeds
2 tablespoons nutritional yeast
1-2 chopped garlic cloves
1/4 cup basil leaves/other fresh herbs
2 tablespoons raisins/dates
as much nut milk or water as needed

to make the noodles, slice the zukes on a mandolin or spiral slicer. set aside in a big bowl. to make the sauce, blend all ingredients until smooth (adding water or nut milk til then). massage the sauce into the noodles until evenly coated. let them rest for a minute to soften and marinate. sprinkle on whatever you like! nom.

pasta with creamy cheeze sauce

my inspiration for this was raw mac n cheese. i guess the macaroni noodle part is hard to do with zucchini BUT this was super nom-alicious (yes, i just invented that word) nonetheless. plus the sauce was killaah.


yet again i feel i must apologize for these less-than-stellar photos. i'm really starting to miss my stolen camera. *a tear falls* anyhoo, let's focus on the positives... oh, that's everything! but more specifically, this recipe. i don't think i'll ever get over how delicious and easy raw pasta is. it's gotta be one of my fave raw food dishes (besides a giant plate of fruit). it is SO satisfying, filling and fun to make. i've ranted about it before.


the cheeziness in this sauce comes from the nutritional yeast, which isn't technically raw; i'm okay with eating though. if you're not - just add more garlic and other flavours you like. it'll still be rawkin.


zucchini pasta with creamy cheeze sauce: serves 3

pasta:
6 small zucchinis
1/4 cup sun dried tomatoes, cut into strips

sauce:
3 garlic cloves
1/3 cup nut milk (may need more or less)
3 dates
1 teaspoon apple cider vinegar
handful fresh basil leaves
2 tablespoons miso
handful of walnuts
1/4 cup nutritional yeast (optional)
2 tablespoons musatrd (optional)
fave spices & salt & pepper

to make the pasta: slice all the zukes on your mandoline or spiral slicer. set in big bowl. to make the sauce: blend all the ingredients until smooth. see if you like it and if not, adjust accordingly. you want it to be pretty thick because it thins out once you add it to the noodles. mix it in with the noodles and tomatoes and let them sit for 10 minutes or so. the flavour and texture will improve. then...

you know what to do.

yam noodles with miso sauce


holy yams! you might be skeptical about using raw sweet potatoes (yams) for food, but as soon as you try this, all your doubts will be vaporized. it's so satisfying. i don't know WHY you'd want or need white pasta with meatballs when you can eat THIS living, raw, cruelty-free meal. i took lots of photos, i hope you don't mind. 

nah... you don't.


hopefully you have a spiral slicer, but if not - a mandoline will do. and if you're REALLY ambitious, you could try to make the noodles manually. good luck.

i've been wanting to make these noodles with some kind of sauce and veggies for awhile, and the plan for this sweet potato (organic!) was to make this recipe then give it to a curious friend who had wondered whether you could raw potatoes. but um... i'm greedy. i ate it all at my house. don't judge me. i promise i will make this again and actually share it. it will be difficult, but i can do it.


 yam noodles with miso mustard sauce, avocado, cucumber & raisins: serves 1-2

noodles:
1 yam (sweet potato)

sauce:
1 tablespoon miso
1 tablespoon mustard
1 tablespoon agave
1 date
vegan milk/water, as needed (about 1/6 cup)
3 chopped garlic cloves

to make the noodles - slice the yam on a spiral slicer or mandoline. mix with a bit of tamari in large bowl and set aside.
to make the sauce - blend all ingredients together. if it's too thick, add more vegan milk/water. if it's too thin, add more miso, dates or mustard. pour the desired amount of sauce onto the noodles and mix in. you don't need that much.
i added chopped avocado, cucumber, beets from our garden, raisins, and parma... of course. i bet this with sesame or pumpkin seeds would be great too.

creamy zucchini pasta & avocado soup


this was really delicious. you should make it very soon and enjoy the incredible flavours that come from the mixture of avocado, zucchini, spinach, mushrooms, garlic and love. i don't think more introduction is required here.


zucchini pasta with garlic avocado sauce: serves 1-2

2 zucchinis sliced on the mandoline or spiral slicer into noodles
1/2 avocado 
2 peeled garlic cloves
1/2 onion
salt & pepper, to taste
2 cups non-dairy milk
handful pine nuts or cashews
1/4 cup tamari
handful basil leaves
1/4 cup nutritional yeast
1/2 cup cauliflower

put noodles into large bowl and set aside. blend all other ingredients together until smooth. taste it. it'll probably be a little bland but i left it that way so you could add things to your liking. some curry powder might be nice. i add that to everything though... :) pour the sauce all over the noodles - BUT YOU SHOULD HAVE SOME LEFT OVER! set it aside and massage the sauce into the noodles with your hands.... mmm, sensual food time. get dirty. i suggest adding some salty veggies to the noodles now. i put on some mushrooms and tomatoes.

 

avocado, cauliflower & spinach soup: serves 4-6

now using the rest of the extra sauce from the noodles, add:
1/2 avocado
2 garlic cloves
1/2 onion
1/4 cup nutritional yeast
1/4 cup tamari
1 cup non-dairy milk (more or less) - or use hot water to make the soup warm
salt & pepper to taste
handful spinach
5 olives

i think that's all i threw in there! it was an improv situation as usual. taste it and see what you wanna add or change. serve in bowls with hemp seeds, basil leaves and maybe some olives or something with saltiness/flavour. pickled artichokes would be nice.

break [the] fast

so the day before yesterday - i finally broke the juice fast. my mom had bought me a papaya and i had been letting it ripen the last few days of the fast so it could be the first delicious piece of solid food i put in my mouth on saturday.

i look kinda crazy... but hey, i go nuts for papaya

it was an other-wordly experience. i transcended! i could hardly even control the ecstasy that was food-tasting. if you ever lose your passion for eating, or think everything tastes bland - just drink juice for a week. the rest of the day i had a few pieces of fruit and then an AMAZING smoothie at gorilla food. remember how i was super stoked to eat a salad for the first thing? nah. i don't think i could've handled that much on saturday, plus i was only craving fruit, to be honest.

later in the day my muscles were getting really sore, especially in my legs. i also had a head ache. i suppose it was the final steps of my detox. i slept really well saturday night.

yesterday i ate several fruits most of the day. it was canada day! so my friend came over and we went downtown to celebrate. super fun ;) when we got home we made a raw feast of creamy pasta with mushrooms, basil and tomatoes along with an avocado spinach soup, and durian pudding for dessert! i will post all the delicious recipes in the days to follow :) don't ya worry. here's some pics to tempt you:

RAW PASTA

I love noodles. 
 -
So it makes perfect sense that among desserts, raw pasta is one of my favourite meals. I prefer it made with zucchini, although bell peppers, yams, carrots and other veggies work well too. I also love it with a creamy sauce and a bit of spice.

It's so satisfying, nutrient-dense, low-calorie and RAW, in every sense of the word. 


I don't really use recipes when preparing raw food (as you probably know by now) so for the following recipes, feel ABSOLUTELY FREE to play them with them as you like. There's endless possibilities for sauce ideas - just like for smoothies and salads. The combinations are infinite.


For the pasta: use any wide, fairly long vegetable - zucchini is the perfect example - and slice it on your spiral slicer or mandoline, into noodles. Set aside. Now for the sauce =)

Avocado Hemp Sauce

1/2 avocado
1 clove garlic
3 Tb tamari
Water or non-dairy milk, as needed
Salt & pepper, add other spices if you wish
2 Tb hemp seeds

Blend all ingredients except hemp seeds until smooth. See if you like the taste and consistency. Stir in hemp seeds and pour over noodles. Let them sit for a few minutes, then enjoy! I like to add hot sauce and raw marinated veggies.


Garlic Miso Sauce:

2-3 Tb miso
1 clove garlic
2 Tb tamari
1-2 Tb rice vinegar
1-2 Tb almond butter
2 Tb black sesame seeds
Water as needed

Blend all ingredients except sesame seeds until smooth. See if you like the taste and consistency. Stir in sesame seeds and pour over noodles. Let sit for a few minutes then eat it up! This recipe is good with broccoli. 


Spicy Asian-y Sauce: 

1 Tb mustard
1 Tb miso
1 Tb nut butter
2 Tb nutritional yeast
Salt & Pepper 
A few drops of hot sauce
1/8 t cayenne/chili powder
I also add hemp seeds and other spices if I want

Blend all the ingredients until smooth, adding water as need to make it creamy. This time, I added black sesame seeds at the end to add some contrast. Do whatever floats your boat!

The Post

Hey my darlings, I'm sorry I haven't posted in FOREVER. I've been preoccupied, but mostly lazy and forgetful. Today's post is just a plethora of photos and things I've been doing/eating for the last weeks. Enjoy. Regular scheduling will return shortly.

First: I made the ultimate sundaes with friends. Avec les sparklers.


They were obviously ridiculously good. I don't even remember what we put on them but it looks like figs, chocolate sauce, and peanut butter? It was a food party. We also made some amazing Thai noodles and sweet and sour tofu... thinking about it now makes my mouth water. Mmm...

I've been eating a lot of raw pasta lately because my dear friend Eva bought me a Spirooli. I usually make it with a nut butter and garlic sauce, or avocado. Here's some recipe ideas. I pretty much always use zucchini for the noodles. Carrots work as well but zucchini has the perfect texture and colour. I've used bell peppers in the past. Any wide vegetable will work. Get creative!



Another thing I've been making a lot for dinner is raw wraps. In seaweed sheets or rice paper. I have always loved burritos and anything else in a wrap. Something about it being packed with good stuff, picking it up in your hands and taking a big bite =) Normally I put in a mix of any or all of the following: carrots, avocado, bell pepper, corn, onion, tomato, zucchini, lettuce, sprouts... and probably a bunch of other stuff. I use the same kinds of sauces I'd put on pasta. Actually - in this picture I HAVE pasta in the wrap. I know - it's gettin' wild up in here.


Look at that sexy avocado... goodness me. 

My mom has been making tons of fresh juice lately in our Jack La Lanne Juicer. I'm a smoothie person myself because I love the fiber, and you take that out when you juice. Having said that, fresh juice is AWESOME! Make it. It's delicious and the since you DO take out the fiber, the nutrients enter your blood within like 15 minutes. Crazy. Juice definitely has it's benefits - it's great for fasting, detoxing and nourishing nutrient deficient individuals. Juicing has saved lives! 



And here's a smoothie I've been making after my workouts these past few days. We don't have any greens so for ONCE my smoothies are actually a pretty colour. It matches my pink glass straw =) It's a blend of a banana, kiwi, protein powder, coconut milk, hemp seeds, and strawberries. 


Okay... coming to a close soon - I made some more chocolate. Of course. For the first time it's TOTALLY RAW! In the past I've only been able to use cocoa because we didn't HAVE cacao. Now we do =) I can never leave things be so I also added mesquite, goji berries, coconut and jungle peanuts. Greg called it chocolate brittle.


ALRIGHT THE LAST THING. Mad Men premiered again after an 18 month hiatus! If you watch the TV show, you will understand the importance of this event, if you don't watch it - you should. It's an awesome show, not only for the sets, costumes and 60's era feel, but for the human drama as well. It's smart and different. 

Anyways, we made vegan White Russians - oh so 60's - and I made raw finger food... dates and nut butter with toothpicks. I suppose any small food with a toothpick in it could be vintage finger food, right? The drinks and snacks were great, and the show's premiere was like seeing a friend after 1 year and a half.
