YOU GOTTA LOVE RAW VEGAN EGG NOG


You asked for it. No, really; you asked me to make a raw vegan egg nog recipe.. so I did. And dang, I sure am glad. This is delicious, warming, smooth, sweet and satisfying all at once. My dad agrees.

I wasn't actually planning on making anything today because I had a late night last night and meant to get some studying done today. Last night I went dancing with my lady friends and then we headed to an artsy shin dig in a sketchy area of downtown (rent is cheap so the poor artists flock there) I was wandering around the streets of downtown in my pimpin' jacket (it's giant, it's green, it's fake fur), a homemade turban to keep the rain off my glasses, and I was a little bit ahead of my friends... I am pretty sure I was mistaken for a homeless male drug addict. Milestone.

ANYWAY, I don't know where I was going with that, let's get back to decadent drinks and find that holiday spirit.


Although as a kid I loved egg nog because it was sweet and creamy and rich; as I grew older and made the choice to be vegan, this beverage became one of the first things took off my "I want this" list. Safe to say it was moved over to the "Never again" collection of foods. I think we all know it's not even remotely healthy, but we should also acknowledge that the stuff you buy in the grocery store is just weird. I mean, I'm sure the original homemade kind was a bit better; but now the generic variety is totally processed and totally suspicious.

There is really no reason to guzzle the milk of another species (mixed with the potential fetuses of ANOTHER species, mixed with processed white sugar) when you have this recipe! Seriously, check out the ingredients on egg nog next time you're tempted to buy it. Then think about what they really are. Yuck. 


OKAY I AM SORRY I'M BEING ALL WEIRD AND NEGATIVE TODAY. I personally don't tend to dwell on the ickiness - it's a word, shhhh - of animal products, and instead like to focus on the positives of healthy whole foods and plants. I guess my mind is trying to balance it out in this post. Ultimately I am not here to preach or tell you how to live your life and what to eat. I am merely here to humbly provide some simple, easy-to-make, mind-boggling delicious recipes. I hope you can appreciate and understand that. No time for haters up in here.


I am hoping these photos look okay to you, because I edited them on my tiny little lap top screen instead of the large monitor I usually use. The colour is also funky on my lap top screen so my fingers are crossed that these pics aren't terrible. Please forgive me if they look gross. I just realized how completely trippy it is that I am writing this in my bedroom right now, just typing out my thoughts as they come into my brain, and soon YOU are going to read them! And probably think "Wow, who IS this girl? She's lost it. I'm outta here."

But wait! I made you egg nog!


RAW VEGAN EGG NOG

1 cup pecans
3 cups water
1 cup dates
1 teaspoon cinnamon
1 teaspoon nutmeg
2 teaspoons vanilla extract 

Blend it all up. Use hot water if you want a warm drink. It should have the consistency of egg nog but if it's too thin, add more dates or pecans. If it's too thick, add more water. Change the spice amounts as you like. Mmm... This will serve around 4 people.

gimme dat sweet hydrating juice

No better way to start your day than with a glorious glass of super charged energy elixir. Amiright!? I don't think I ate enough yesterday so this morning I was feeling a little weak (but also I have been doing mad squats lately so my legs were quite sore). I needed a pick-me-up and fast!


My regular breakfast of fresh juice took care of this and I was feeling strong and hyped again in no time. Is there anything fresh green juice CAN'T fix? I mean seriously, it reverses cancer. If I never find my soul mate I'll most likely do just fine because I will find a way to marry juice. (After I typed that out all the possible technical problems came to mind but I will push them aside in the name of love.)


After gulping down my juice while listening sweet tunes on the radio, I went to work prepping my dinner for tonight. I don't usually do fancy raw dinners, preferring to keep it simple and low-prep-time with big meals of salad, steamed veggies with whole grains, fruit bowls or smoothies; but today I felt like making something special that I could share with you. The recipe will be up tomorrow. If you want a hint, think: portobello meat balls with "slow-roasted" baby tomatoes and marinated zucchini noodles.

Dang. I just gave it away.


hydrating cucumber pineapple juice

1/2 pineapple
2 green apples
1 cucumber
1 small garlic clove
1 tablespoon fresh ginger
1 lemon 
anything else your heart desires 

Wash, peel and slice your produce as needed. Put through your juicer than slurp away.

creamy mushroom soup with avocado + miso


I love raw soups. They are basically savoury smoothies that you top up with herbs and veggies and eat with a spoon. Okay, maybe that isn't the most appealing way to describe them, but my point is: they are full of only the healthiest whole foods your body wants, and served in a way that is easy for your system to absorb. You get excellent nutrition that much quicker... and it tastes freaking amazing.  


My favourite type of raw soup (although there are several worthy competitors) is mushroom soup. I tried adding an avocado this time and the result was magnificent. I think my mom was reading my mind the day I made this because I was going to use the normal white mushrooms we usually have in the fridge, when she came home with fresh shitakes and portobellos. Shitakes are my all time fave shroom! I highly recommend marinating the mushrooms you will use for the garnish. All you have to do is rub them with tamari and a bit of olive oil, then leave them in the dehydrator or on the counter while you make the soup. It brings out their rich flavours and softens them.


creamy mushroom soup with avocado + miso: serves two to four 

Soup:
1 portobello mushroom 
3 shitake mushrooms
½ avocado
1-2 tablespoons miso
2 cups hot water
3 dates (optional) 
1 teaspoon walnut oil (optional) 

Garnish:
3 sliced shitake mushrooms, marinated in tamari for a few minutes 
Salt + pepper
¼ fresh cilantro leaves 

Blend all the ingredients until smooth and adjust according to taste. Pour into bowls and top with mushrooms, cilantro and sprinkle on salt and pepper, if desired.

salad, salad, salad: the main meal


Like the title says, salad should be the main meal on the dinner table! It is so important to get tons of greens in your diet, as well as veggies. Both are super low calorie, high fiber and packed with the best quality nutrition on the planet. What more do you need? Well... okay, you need raw brownies too. Note: If you don't like tofu plain and raw, then go ahead and marinate, bake, or prepare it however you like.

Mega dinner salad: serves one to four people

Dressing:
1 tablespoon each of mustard, tahini, miso, raisins
3 tablespoon sun dried tomatoes 
Water, as needed

Salad:
3 heads of lettuce, washed and ripped into pieces
1/4 cup baby tomatoes, halved
5 olives, halved
1/4 package of tofu, cubed
3 mushrooms, sliced and marinated in tamari
1/2 avocado, chopped


Blend all the ingredients for the dressing until smooth, using as much water as needed. 
Toss the lettuce with dressing until evenly coated then top with the rest of the salad ingredients. Enjoy!

raw blueberry tarts

the crust of these tastes like raisin butter tarts. holy moly. yet another dangerously delicious recipe...


these were originally going to be one giant raw blueberry pie, complete with a lattice top crust.

why pie? well, first of all - why not. but also because i just got home from an 8-day motorcycle trip with my dad across the cascade mountain range through canada and northern america. along the way i was able to get vegan food everywhere and it was all delicious; but sadly i could never get a slice of homemade, local, fresh, wild berry pie at any of the adorable diners we stopped at! apparently they like butter in small towns.

so i decided to make a raw blueberry as soon as i got home. we have tons of amazing blueberry bushes in our front yard and they make up a large chunk of my diet in the summer. mmm...


i'll be posting about my motorcycle adventure tomorrow, in case you're interested. in the meantime, make these tarts (or make it into one big pie) and enjoy summer before it winds down! i'll also be posting a recipe for a KILLER KALE SALAD. i had it for lunch. man, was it good. 

for one lovely afternoon: i suggest doing some yoga or meditation with this music, creating a kale salad with garden veggies, and finally making these tarts. following that, maybe have a glass of wine with your loved one and watching a movie? whatever floats your boat. it's your day.


mini blueberry tarts: makes about 5

crust:
1 cup walnuts
1 cup cashews
1/2 cup dates
1/2 cup raisins
1/2 teaspoon himalayan salt

filling:
4 cups organic blueberries
4 tablespoons agave/maple syrup
1/8 teaspoon cinnamon 

for the crust, process the nuts into a rough flour in your food processor, it might get kind of like a really thick nut butter (mine did). then add the dates, raisins and salt. process until it all sticks together. i couldn't stop EATING THIS. quickly press the crust into lined cupcake tins before you devour it all. put in the fridge.

to make the filling, mix the sweetener and cinnamon gently into the blueberries. you could add some vanilla and salt here if you want. then fill the tarts with the blueberries and voila!

curry with tofu & grilled vegetables


this curry is delish! mom wasn't here for dinner so it was my turn to make something. brown rice had been cooking and i figured some spicy curry with broccoli, leftover grilled veggies and tofu would hit the spot; since it has been raining all day here.

everyone said it was really great, in fact - jasper used the word "addictive". can't argue with that. we all took seconds. i'm glad it was so tasty because i didn't use any conventional curry recipe. i didn't even have curry paste. so if you're in the mood for warming curry, crispy tofu, tender veggies and rice; try out this funky recipe!


yellow curry with tofu, veggies & rice: makes a big ole pot

1 onion
4 garlic cloves
1 head broccoli
1 grilled red pepper
2 grilled zucchinis
2 packages tofu
1 can coconut milk
6 cups vegetable broth
3 tablespoons raw sugar (or other sweetener)
3 tablespoons tamari (or soy sauce)
3 bay leaves
3 tablespoons curry powder
1 tablespoon each of coriander, paprika, cumin, turmeric, garlic, and onion powder
1 teaspoon each cinnamon, chili flakes, and dill
1/2 teaspoon chili powder

prepare the tofu: sautee it on med-high heat with a bit of olive oil, rice wine vinegar and tamari (soy sauce) until it browns. set aside.

chop all the veggies. in a large pot, sautee the onions, garlic and all the spices together with 2-3 tablespoons of olive oil and 1 tablespoon of rice wine vinegar until they're translucent and softened. add the remaining ingredients, including the tofu and veggies. let simmer on low heat for 30 minutes or so, until the broccoli is cooked enough for you. see you if you like it! curry is easy to change.

serve with whole grain brown rice in bowls with chives, hot sauce, sweet basil, and gypsy kings. yeah man!


oh and i have some news: I GOT TWITTER! it's mainly to get my blog out there more (by "there", i mean the world wide web). so follow me, please! it's so weird that i have a blog and a twitter account now. i feel like such a participating member of my generation, a feeling that is rare for me. i'm a bit of an enigma... if you haven't noticed.

RAW PASTA

I love noodles.

So it makes perfect sense that among desserts, raw pasta is one of my favourite meals. I prefer it made with zucchini, although bell peppers, yams, carrots and other veggies work well too. I also love it with a creamy sauce and a bit of spice.

It's so satisfying, nutrient-dense, low-calorie and RAW, in every sense of the word. 


I don't really use recipes when preparing raw food (as you probably know by now) so for the following recipes, feel ABSOLUTELY FREE to play them with them as you like. There's endless possibilities for sauce ideas - just like for smoothies and salads. The combinations are infinite.


For the pasta: use any wide, fairly long vegetable - zucchini is the perfect example - and slice it on your spiral slicer or mandoline, into noodles. Set aside. Now for the sauce =)

Avocado Hemp Sauce

1/2 avocado
1 clove garlic
3 Tb tamari
Water or non-dairy milk, as needed
Salt & pepper, add other spices if you wish
2 Tb hemp seeds

Blend all ingredients except hemp seeds until smooth. See if you like the taste and consistency. Stir in hemp seeds and pour over noodles. Let them sit for a few minutes, then enjoy! I like to add hot sauce and raw marinated veggies.


Garlic Miso Sauce:

2-3 Tb miso
1 clove garlic
2 Tb tamari
1-2 Tb rice vinegar
1-2 Tb almond butter
2 Tb black sesame seeds
Water as needed

Blend all ingredients except sesame seeds until smooth. See if you like the taste and consistency. Stir in sesame seeds and pour over noodles. Let sit for a few minutes then eat it up! This recipe is good with broccoli. 


Spicy Asian-y Sauce: 

1 Tb mustard
1 Tb miso
1 Tb nut butter
2 Tb nutritional yeast
Salt & Pepper 
A few drops of hot sauce
1/8 t cayenne/chili powder
I also add hemp seeds and other spices if I want

Blend all the ingredients until smooth, adding water as need to make it creamy. This time, I added black sesame seeds at the end to add some contrast. Do whatever floats your boat!

The Best Chocolate Pudding of RAW SUPERFOODS


I love avocado. It's a magical, unique fruit that's chockablock full of nutrients, vitamins and fiber. It's actually been called "the most nutritious of all fruits"! And it's toted by countless health authorities as one of the key foods for superior nutrition, with good reason.

Besides it's endless list of health benefits - it just tastes darn DELICIOUS. Like no other food. It's creamy, rich, and can be used in a butt load of creative or simple ways for your food AND cosmetically. Seriously, whenever I eat an avocado (almost every day) I put like half of it on my face, neck and arms to make my skin soft and glowing. Mmm...

I came home from a long day of school quite hungry and ate 2 giant heads of broccoli, which totally filled me up. But yet I made this pudding for dessert and ate it all because it was actually irresistible. I dare you not to eat it all. So without further ado, here's an uber simple recipe for a super food chocolate pudding.  
I'm not exaggerating when I say this BETTER than regular pudding, and it's SO good for you. 

You can eat a giant bowl of rich chocolate pudding and feel PROUD of yourself, not guilty.
It's a wonderful world, people. 

(Sorry, the pics aren't so great today. How can you expect me to be patient and take tons of pretty pictures when I have the best chocolate pudding in the universe sitting right in front of me? You can't.)


The World's Greatest Chocolate Pudding: serves ONE

1 very ripe avocado
1-2 Tb honey 
2-3 Tb cacao 
Pinch of salt

Feel free to use agave or maple syrup instead of raw honey, I prefer it because it's a super nutrient-dense food though =) 
Also go ahead and add mesquite, cinnamon, and/or coconut oil. They all add new dimensions to the flavor. I just wanted to keep the recipe simple.

Blend all ingredients until smooth, adding water as needed to make it creamy. EAT.
