chocolate cream caramel bars


This is one of those dangerously delicious recipes. I warn you now that these bars are basically addictive, thus they'd be the perfect treat to bring to party or to give to people whom you're trying to bring over to the vegan side (A.K.A. THE COOL SIDE). A mocha version of them will be featured in my upcoming cookbook (out March 2014). If you like things sweet and decadent - you're gonna love these.


I am very happy to be sharing this recipe with you today not just because it's ridiculously good-tasting (that was a bad Zoolander reference) but also because I haven't been sharing many recipes with you at ALL lately. As I'm sure you know, it's because I am busy busy busy working on my book. I promise it will be finished soon and I'll be back here giving you raw vegan recipes out the whazoo.

What. Is. A whazoo. 


chocolate cream caramel bars

Crust: 
1 cup almonds or other nuts 
1 cup dates
Pinch of salt (optional) 

Caramel:
½ cup cashew butter
½ cup coconut oil
1 cup dates

Chocolate cream:
1/3 cup coconut oil
2-3 tablespoons cacao powder
¼ cup preferred liquid sweetener

To make the crust: process the almonds into flour in your food processor, then add the dates and process until it all begins to stick together. Press into the bottom of a lined baking pan (I used a small bread pan) and refrigerate. 

To make both the caramel and mocha layers: just blend the ingredients in each list until smooth. Feel free to add other flavours like vanilla, chili , ginger, etc. Spread the caramel onto your crust, followed by the chocolate cream. Refrigerate until completely set; this will take a couple hours.

jewel fruit tart with caramel almond filling


This simple recipe is sure to please those skeptical that delicious desserts can also be healthy. Although there is nothing like a fresh-picked bowl of berries in the summer, I love the way frozen berries glisten with frost; I think they look like gems or jewels. Jewels packed with anti-oxidants! The beeest kind. 


I made this tart for a friend's housewarming party this evening, which I am looking forward to attending. The new house is right by the beach and the weather is gorgeous today so I anticipate a beach walk tonight, after we all enjoy the berry goodness positively overflowing in the walnut raisin crust of this recipe. 


I was going to keep it extremely minimal and just make the crust then fill it with fruit and be done (to be honest, extremely minimal would be just bringing fruit... but too bad) but I decided to make an almond caramel filling that I put the berries on top of. You can leave it simple or add the sweet filling - up to you, as always!


fruit tart with caramel almond filling: 

Crust:
2 cups walnuts
2 cups raisins

Filling (optional but recommended):
1/4 cup almond butter
1/4 cup melted coconut oil
1/4 cup maple syrup or 1/2 cup date paste
1/2 teaspoon cinnamon
Water, if needed

Topping
3 cups frozen berries (or however much you want)
1/2 cup goji berries

To make the crust: pulse the walnuts in your food processor until they become a rough flour. Add the raisins and process until it stick together, forming a rough dough. Press into a tart tin. Put in the fridge and let it set for about 2 hours (this is preferable but not absolutely necessary). 

To make the filling: blend all the ingredients until smooth. Spread gently into the bottom of your tart crust and then let it harden in the fridge for 30-60 minutes. Now top the tart off with all the berries, slice and serve!

apple sandwiches with date caramel + almond butter


These are really fun to make, and super healthy. Oh and as you can tell from the photos - so easy they hardly need instructions. Slice up some apples and layer them with caramel and almond butter. Yum! Make these with kids and you will make some new little friends. 


They actually taste like candy or something... it's almost too good to be true. But then - isn't zucchini pasta almost too good to be true? Yes. Yet it exists. Thanks, Mother Nature and innovative kitchen equipment. So eat as many of these as you want and feel great afterwards about yourself and your awesome healthy, humane, eco-friendly choices.


apple sandwiches with date caramel + almond butter : serves 2 to 4

4 apples
Almond butter or other nut butter

Caramel:
1/2 cup dates
2 tablespoons liquid coconut oil (or use water... won't be as creamy though)
1/4 teaspoon salt (optional) 
1/2 teaspoon vanilla

Make the caramel: blend all ingredients until smooth. 

Assemble: Slice the apples thinly from bottom to top and then core each piece. Now layer each slice with alternating caramel and nut butter. Enjoy!

carob caramel tarts with coconut


These are just plain good. They are the perfect recipe for anyone because raw food skeptics will be like: "Oh snap. This is HEALTHY?" and you guys who already know raw vegan food is delish will say: "Mmm, what a wonderful world. I love Emily so much." Yes. You will say it.


Anyway, what I am saying is that this is a great treat to make for people you want to convince veganism is an awesome lifestyle and diet choice. They are straight up chocolate and caramel filled goodness that any mouth can appreciate. If you don't like chocolate, caramel or coconut... I'm worried about you. Seriously.


Now I have been saying "chocolate", but I've been lying. I do that. I actually used carob in this recipe because (a) I ran out of cacao but also (b) because I LOVE carob and felt it should get some recognition. Sometimes I prefer carob to chocolate, to be honest. It is a little sweeter and has a unique deliciousness all to it's own. I think it tastes fruitier.

Just like cacao, carob has a plethora of health benefits. It's got tons of antioxidants, fiber and nutrients. It has less fat than chocolate, and is sweeter. But if you really can't be swayed to try it - or you think it's nasty and gross - go ahead and sub in cacao or cocoa. I won't beat you up or anything. Although... I could. Vegan muscles yo. Thank you, kale and tempeh.


carob caramel tarts with coconut: makes about 7

Crust:
1 cup cashews
1 cup walnuts
1 cup dates

Caramel layer:
1 cup dates
2 tablespoons melted coconut oil 
1 teaspoon vanilla
Pinch of salt (optional) 
Water, as needed (around 1/4 cup) 

Carob layer:
1/4 cup carob 
2 tablespoons melted coconut oil
1/2 cup dates (or maple syrup) 
Water, as needed (around 1/4 cup) 

To make the crust: pulse the nuts into crumbs in your food processor. Add the dates and process until it can stick together. Press into the bottom of lined tart or cupcake tins and set aside. 

To make the caramel: blend all in the ingredients together in your food processor or blender until smooth, adding as little water as possible. Spread into the bottom half of each tart crust and put in the fridge. 

To make the carob part: blend all in the ingredients together in your food processor or blender until smooth, adding as little water as possible. Spread on top of the caramel layer of each tart crust and put in the fridge until they have set, about 30-60 minutes. Take out of the molds, top with coconut flakes and enjoy!

banana chocolate caramel ice cream cake


I dreamt about making this cake so I figured I better do it in what we like to call "reality" as well. It consists of banana vanilla ice cream, date caramel and avocado chocolate pudding. I decorated it with bananas and a goji berry coulis, but that's optional. I just like adding other colours for contrast. The crust is also optional, it's there to add another texture.


I consider food a form of art. Not simply because of it's visual appearance, but more so because of what it symbolizes: a beautiful, symbiotic relationship between our bodies, our selves and what we are made of. What we choose to consume and put in our precious bodies is literally what we choose to become, physically speaking. I want to be creamy bananas, gooey dates and luxurious avocados. Not the greasy, fried dead body parts of my friends. No thanks - that's gross. 


The banana ice cream got a bit icy (Boo.) so let this cake thaw for about 20-30 minutes until it gets creamy again. It's gonna be hard not to eat half of every layer as you make them and put them in bowls. I know I did. Like, what the heck, Nature - why you gotta be so awesome all the time? You're making the rest of us look bad. All I can do is play with your perfect creations and pretend to take credit for "making" them. Shh...


banana chocolate caramel ice cream cake:

Crust (optional):
1 cup almonds
1 cup dates

Caramel:
1 cup dates
1/4 cup water
1 tablespoon almond butter

Chocolate pudding:
1 avocado
1/4 cup cacao 
1 tablespoon nut milk
1/4 cup agave nectar (or 1/2 cup dates + 1/4 cup water)

Banana ice cream:
3 frozen bananas
seeds of one vanilla pod

Goji berry coulis (optional):
1/4 cup dried goji berries
3 tablespoons agave nectar
1/8 cup water

Make the crust: pulse the nuts in your food processor until they become crumbs, add the dates and process until combined and sticking together. Press into the bottom of a spring form pan and set aside.

Make the caramel: process the ingredients in your food processor until smooth, thick and creamy. Place in a bowl and set aside. Follow the same instructions for the chocolate pudding and goji berry coulis.

Make the ice cream: blend the bananas and vanilla in your high speed blender until thick, smooth, creamy and white. It may take a minute but then it changes into ice cream really fast, so pay attention.

Assemble the cake: spread the ice cream in the bottom of your spring form pan and then spread the caramel over that, mixing it into the ice cream a little with a spatula. Then carefully spread the chocolate pudding over this and put in the freezer overnight. When it's ready, let it thaw for 20-30 minutes then decorate with the coulis and serve with bananas and other fresh, organic fruit.

chocolate caramel tart with orange & sea salt


This turned out exactly as I had hoped. Score! The other day I got the image of this dark chocolate, decadent, sinful-looking tart with a hidden layer of caramel in my head and couldn't get rid of it. So I made it for you. I decided to add some orange juice and zest for the holiday season (oranges are christmas-y, right?) and also sprinkled on some sea salt because frankly it makes everything better. Then I realized it looked like it was snowing on my tart! Totally intentional. 


I cannot BELIEVE it is Christmas Eve today. I don't usually pay a lot of attention to reality but this year I've been away in my mind more than normal because I hardly even realized it was December. Woah, when did that happen? This evening we are going to a have nice dinner with family and other loved ones, as is the conventional custom I suppose. Tomorrow we're getting up early to systematically (yes, the von Euws have a system) unwrap our gifts to and from one another.

I am excited of course, but mostly just looking forward to spending the holiday with my boyfriend. My gift for him is below - a mug I drew all over, which I will fill with my poems. I don't really want any other presents except him! Having said that, I AM running low on virgin coconut oil... and I'm always down for some books on philosophy.


This tart is going to be dessert tonight and I can tell you right now - it's a keeper. Who doesn't like chocolate and caramel, especially when you don't have to feel guilty about eating it? Only crazy people. But don't judge them - they have lost their sanity. You can't trust anyone who doesn't like caramel.

chocolate caramel tart with orange & sea salt:

Crust:
2 cups almonds
1 1/2 cups dates

Caramel:
1 cup dates
1 cup water, use as much or little as needed to get a thin caramel consistency
2 tablespoons chia seeds 
1 tablespoon agave nectar
1/8 teaspoon sea salt

Chocolate:
3/4 cup cacao
2/3 cup maple syrup
2/3 cup melted coconut oil
juice and zest from 2 oranges
1 teaspoon vanilla (optional) 

To make the crust: pulse the nuts in your food processor until crumb-sized, then add the dates and pulse until everything sticks together. Press into the bottom of a tart tin and put in the freezer. 

To make the caramel: blend all ingredients (you can do this in the food processor) until smooth, adjusting to your desires. Spoon into the bottom on the crust and put back in the freezer. 

To make the chocolate: blend all ingredients in your food processor until smooth. When the caramel in your crust is solid, spread the chocolate on top and put back in the freezer. Let it stay in there overnight, then garnish with sea salt and orange zest and serve.

raw vanilla coffee creme pie with a chocolate crust


i don't even LIKE coffee; yet this is one of my new favourite recipes. my opinions on coffee are what you might expect: it's acceptable in moderation! i do not think it is a good idea for your mind or your body to chug 5 cups of cream- and sugar-laden coffee every day; but the occasional mug of organic black coffee can be beneficial. i prefer getting my caffeine from green tea simply for the flavour. now that i think about it - i bet this recipe would be delicious with some potent green tea substituted in for coffee! 

hmm... i may have to try that.


this recipe is delightful and - i give you fair warning here - difficult to stop eating. the crust is a mix of nuts, dates, cacao and cinnamon so it is like a spiced chocolate base; then the creme layer is a smooth blend of black coffee, cashews, and a whole food sweetener of your choice (everyone has their preference). i drizzled a salted caramel sauce on top made from date paste and sea salt and for the finishing touch added some goji berries, raw pumpkin seeds and coffee beans for colour and contrast. HECK YA.



bathe in the lusciousness of the creme layer mixed with the crunchy bite of the cinnamon chocolate crust. OH MA GERD - IT'S SO GOOD. i should buy some restraints when i make this from now on to control myself.  i predict the family will enjoy it as much as me and my boyfriend did this morning. yep, that's right. we ate it for breakfast... after some fresh juice of course.



how's the weather where you live? it has been raining here for days and i'm lovin' every minute - i'm lovin' it. (no affiliation to mcdonalds here.) as long as i wear a good pair of boots and bring an umbrella the rain don't bother me none. plus it's really cozy when you're inside with a fire, special people, two cats and this creme pie...


i suggest eating this at most a few hours before you go to sleep otherwise it might keep you up if you are sensitive to caffeine. try it for breakfast! it was perfect. 


cashew coffee vanilla creme cake with a cinnamon chocolate crust: serves 8 or so

cashew coffee vanilla creme:
2 cups raw cashews
seeds scraped from 1 vanilla pod
3 tablespoons melted coconut oil
1/4 cup maple syrup (or agave/raw honey/date paste)
1/8 teaspoon salt
1/3 cup very strong, brewed organic coffee

cinnamon chocolate crust:
1 cup pecans
1 cup dates
2 tablespoons cacao powder
1/8 teaspoon salt
1/4 teaspoon cinnamon powder

salted caramel drizzle:
1/2 cup dates covered in enough water (or coffee) to cover them
1/2 teaspoon sea salt
1 tablespoon nut butter (optional)

to make the creme, blend all ingredients until smooth. set aside. 

to make the crust, process the nuts into a rough flour in your food processor and add all the other ingredients until you can press it together, then press it into the bottom of lined small spring-form pan. scoop on the creme and let it set in the fridge or freezer. 

to make the caramel drizzle, blend the dates, water/coffee, salt and nut butter (if using) until smooth and pretty liquid. if it is too thick - add more water; if too thin - add more dates. drizzle on top of your creme pie and garnish with coffee beans, goji berries and pumpkin seeds. it is better - but difficult - to wait until the next day to eat this, let the flavours get to know each other. then DEVOUR.
